Purjolökssoppa, ca. 4 people
8 (soft) potatoes
1 L salted water
2 small leeks or 1 big one
2 cubes of vegetable boullion
Slice the potatoes in centimeter-thick slices and boil until they are a little soft.
Chop the leek and onion in rough pieces and add to the boil for 10 minutes, until the potatoes almost fall apart.
Blend in a blender.
Serve with lemon balm, bacon and sour cream, or alternatively garlic bread with vegan butter.
